Quick and easy coronation chicken


Coronation chicken is so simple and easy to make and great for using up your leftover chicken. This recipe is a combination of shredded chicken meat, herbs, spices, almonds and creamy mayo and is always a winner at picnics, BBQ's and buffets.

There are so many delicious ways to enjoy this dish. We recommend serving with salad and new potatoes, rice or baked potato but also tastes great in a salad or wrap. 


Shredded chicken meat from a medium sized Sutton Hoo Chicken or even better leftovers from your roast.
3 tablespoons of mayonnaise
2 teaspoons of madras curry power
1/2 teaspoon of cinnamon
Ground black pepper
1 tablespoon of mango chutney
A small handful of sultanas
1 shallot, finely chopped
Coriander leaves, finely chopped
Handful of toasted sliced almonds to garnish


  1. Mix the mayonnaise, curry powder and cinnamon together in a large salad bowl. Season with black pepper and mix in the sultanas and chutney. Altering quantities to your preferred taste.
  2. Pour the shredded Sutton Hoo Chicken meat in to the salad bowl and mix well together.
  3. Serve with salad and new potatoes, rice or baked potatoes. Also fantastic in a wrap.
