Thai Spiced Roasted Chicken

Fresh Lemongrass, Ginger, Garlic, Chilli, Lime combine to bring an explosion of flavours with this delicious roasted chicken. I promise you it’s difficult to put down once you start eating it! This is a guest recipe from @garlicrosemaryandsalt.

INGREDIENTS

1 whole chicken portioned into eight pieces.

2 sticks of lemongrass.

1 lime juiced.

1 thumbsized piece of peeled ginger or galangal.

2 red chillies.

4 cloves of garlic

1 tablespoon of sugar (or palm sugar)

2 tablespoons of fish sauce [I used @squidbrandglobal premium]

2 tablespoons of veg oil.


METHOD

  • Whizz all of the marinade ingredients together in a food processor.

  • Portion a whole chicken into 8 pieces.

  • Place chicken in a food bag together with the marinade.

  • Seal and massage the marinade into the chicken.

  • Allow to marinade for 1 hour in the fridge.

  • Preheat oven to 190 deg C

  • Arrange the chicken pieces on a lightly oiled roasting tray and roast for around 45mins or until cooked through.

  • Serve with steamed jasmine rice and drizzle over those delicious roasting juices.

Refreshingly Fiery Asian Slaw

This is a great coleslaw to serve with roasted, grilled or BBQ meat. It packs so much zingy, fresh flavour and is extremely moreish so be sure to make a big batch. My two favourite flavoured dressings are Thai or Vietnamese.

The Vietnamese dressing is simple and light: 3 tbsp fish sauce, 3 tbsp rice vinegar, 1 tbsp sugar

1 clove crushed garlic & 1/2 teaspoon chopped red chilli. Shake in a jar and pour over.

The Thai Dressing I made here is a bit more punchy:

Shred half a white cabbage, 1 carrot, 1 banana shallot, 1/4 cucumber, half a red pepper and

as much fresh chilli as you like. You can add radishes, red onion, bean sprout and toasted

peanuts too. Pour over the dressing before stirring through fresh coriander and finely

chopped mint leaves. Good on its own or as a delicious side.
