The 3 Meal Challenge - Guest Edition

We’ve got another 3 Meal Challenge for you! The premise of which is you take One Sutton Hoo Chicken and create THREE delicious meals that the whole family can enjoy.

This challenge will help you save money by making the most of your Sutton Hoo Chicken as well as providing some inspiration of what to cook. And you’re in for a treat because this 3 Meal Challenge is a guest edition with recipes coming from the sensational cooking duo Joey and Katy Cook.

Joey & Katy live and work in Suffolk. They specialise in seasonal veg-centric cooking, where they try to use local produce as much as possible and champion Sutton Hoo Chickens!

Joey & Katy have shared with us 3 recipes for this challenge which they like to call a ‘pecking’ order which highlights the best order to complete this 3 meal challenge to get the most from it:

  • Hero Recipe - the first and main recipe that provides the leftovers for you to use in meals 2 & 3.

  • Spin-off Supper - the second meal in the challenge.

  • Mop-up Meal - the final meal in the challenge where you ‘mop-up’ any leftovers from your Roast Chicken (including making stock from the carcass).

Meal 1: Lemon & Thyme Roast Chicken with Creamy Parmesan Bean Gratin

The best way to start a 3 meal challenge is by roasting a whole bird to ensure you have plenty of leftover chicken to work with for follow up meals. In this ‘hero’ recipe to kickstart the challenge, Joey & Katy have paired classic Lemon, Thyme & Garlic flavours with some fresh Italian accompaniments that make this dish bursting with zing & flavour.

This ‘spin-off supper’ uses leftovers from Meal 1 to help you create this delicious dish - a salad that combines fresh herbs and lemon juice in the quinoa to perfectly contrast with the creamy and softly spiced coronation creme fraiche.

The third and final meal in the challenge is a flavoursome broth. This recipe is absolutely jam-packed with warming, fragrant flavours such as red chilli and zingy coriander. Yum!
